About the Fares Family

Jad, our grandfather, resided in Kawkaba, a small town located in the southern region of Lebanon. He inhabited a rich and fertile land which he passed down to his children and grandchildren. The land possessed a small number of olive trees. Today, as his grandchildren, we have cultivated this land, planted more olive trees, and produced a distinctive artisanal olive oil.

Our trees are located in the small town of Kawkaba in southern Lebanon. Kawkaba is situated in the foothills of Mount Hermon. According to historians, Jesus Christ is said to have walked this land and performed miracles in this region.

Translation

According to ancient historians, Jesus passed through this land while on a visit to His family in Kawkaba. While there, it is said that he miraculously brought forth water from a stone. He then blessed the water and drank from it. Consequently, the people of Kawkaba and neighboring regions believe this water to be sacred.

Our Souri Olives

Our Souri Olive trees are native to Lebanon. They are known for their large size and their ability to produce high-quality olives that are used to make olive oil. The olives produced from these trees are known for bringing forth olive oil with a rich, well-balanced, and distinctive flavor profile that is influenced by the climate and the soil they are grown in. 

  • Picking

    Olives are typically harvested either in the fall or winter when the olives are fully ripe. They are traditionally harvested by hand or shaken loose from the trees

  • Sorting

    We then Sort our olives to make sure each olive that will be pressed is ripe and without defec

  • Pressing

    After sorting and washing the olives, they are crushed to form a paste and then pressed to extract the oil from the paste

  • Settling

    The oil is then decanted and left to settle for several weeks to allow sediment and impurities to settle to the bottom. Then it will be filtered, and stored in dark cool containers.
